Spinach-Basil Pesto

A twist on the classic condiment, this flavorful and nutritious spinach-basil pesto is a great addition to sandwiches, pastas, pizzas, or soups. The addition of spinach and walnuts also make this a more budget-friendly option than your traditional pesto. Any of our spinach products would work well here, even our baby arugula-baby spinach or baby kale-baby spinach blends. If you happen to have an abundance of spinach and basil, make a double or triple batch of this pesto and freeze it for up to 3 months. If you plan to use the pesto in small amounts, freeze the sauce in ice cube trays and then store the frozen cubes in a zipper bag. This version uses walnuts instead of the classic pine nuts, but you could use pine nuts or even hazelnuts.

Basil Olive Oil

You can purchase basil-infused olive oil, but it’s so easy to make that it’s worth your time if you truly love fresh basil at its peak.

This infused oil makes wonderful use of the fresh flavor and aroma of fresh summer basil, especially at the height of the season. Thanks to Cal Stamenov, Executive Chef at Bernardus Lodge in Carmel Valley, for this recipe.

Green Goddess Dip and Dressing

Green Goddess Dip is a classic for flavor, color and all-around “dippability.” We’ve created our own version of this classic for our Farm Stand customers, who love its delicate green color and thick, creamy texture.

Or course, it works with the usual party fare like crackers or chips — but it’s just divine paired with a variety of fresh, crunchy organic veggies like carrots (try our Mini Peeled), celery, radishes, bell peppers, wax or green beans, broccoli, cherry tomatoes…or any of your favorites.

You can also turn this Green Goddess into a flavorful dressing for sturdy lettuces like romaine, iceberg, red leaf and oak leaf. Or try it with one of our Deep Green Kale Blends: superb!

Carrot Vinaigrette

If you’re looking for a vinaigrette dressing that’s light and fresh, this unusual combination of carrot juice and almond oil fits the bill admirably. Walnut oil also works well; its clean, distinctive taste complements the sweetness of the carrot juice. You can also use extra-virgin olive oil, although it generally adds a piquant bite to the vinaigrette (unless it’s a French olive oil).

This dressing marries beautifully with more assertive greens like watercress or baby arugula, as well as with more delicate spring mix. It will keep in the refrigerator, covered, for 1 week.

Universal Vinaigrette

We’re all looking for ways to save precious time, so sometimes it’s easy to default to grabbing a store-bought salad dressing. However, once you understand how absolutely easy (and delicious!) making your own vinagrette can be, you will never look back. By having staple vinagrette ingredients always stocked, it takes just moments to make. Plus, you don’t get any extra, unwanted ingredients.

We absolutely love what we call our Universal Vinaigrette recipe because of its versatility. You can sub the thyme with tarragon, or any of your favorite herbs. What’s more, you can use it beyond salads! It’s delicious for marinating chicken or putting on rice, too. By preparing it in a mason jar, you don’t have to dirty any dishes and you just shake it to mix together.

Pesto Vinaigrette

This bold, tangy dressing elevates any combo of salad greens & toppings to delicious heights. We especially like it on crisp romaine and tender heirloom lettuces. It’s consistently the most popular dressing on the all-organic salad bar at our Farm Stand in Carmel Valley, CA.

Pesto Vinaigrette’s vibrant flavor also makes it a great dip for veggies, a flavorful spread for sandwiches (especially on a hearty bread), and a wonderful marinade for grilling vegetables.

As is, the recipe makes about 6 cups — if you’re like us, you’ll find lots of ways to use it and go through it quickly! You can easily cut the recipe in half if you’re looking for a smaller amount.

Sicilian Vinaigrette

This zesty salad dressing is tailored to our Roasted Butternut and Baby Kale Salad, but you might find it pleasing on bold lettuces like our Romaine with other toppings. This recipe makes about 1/3 cup of dressing.

Special tool note: A mortar & pestle make it easy to create the paste called for in this recipe, but if you don’t have one, you can pulse the ingredients in your food processor for a few seconds.

Cilantro and Arugula Salsa

Here’s an unusual and immensely flavorful take on fresh salsa, starring Earthbound Farm Organic Cilantro and Baby Arugula. Dial the heat up or down as you like by varying how many jalapeño peppers and/or pepper seeds you include.

This salsa is wonderful on traditional tortilla chips, or try it on fresh veggies like jicama sticks, cucumbers, carrots and other favorites. It’s great for adding some light yet bold spice to grilled chicken or fish, and it simply lights up a taco salad.

This recipe makes about 5 cups of salsa, or about 10 half-cup servings (but if you’re serving real salsa lovers, you might want to double the recipe).

Jalapeño Arugula Aioli

Customers at our Farm Stand’s Organic Kitchen in Carmel Valley, CA, crave this creamy green sauce that, despite its spicy name, has just a slight bite. Arugula gives the aioli its peppery freshness, and baby spinach provides the delicate green color. While some jalapeño peppers are fairly mild, others are quite hot. If the jalapeños are too hot for your taste, use less and leave out the ribs and seeds.

Fresh and piquant, arugula aioli makes a great dip for raw vegetables, steamed artichokes and chips. Its devotees also love it spread on flank steak sandwiches or drizzled over beef kabobs. This recipe makes about 1-1/2 cups of sauce.

Although this recipe comes together very quickly, it needs to rest in the refrigerator for at least 3 hours for the flavors to develop, so plan accordingly.
